At Ardor, I led the creative development of a cocktail program that mirrors the restaurant's vibrant, produce-driven cuisine. The menu concept, Subtext, is built on layered flavours and subtle complexity, designed to evolve in the glass. This cocktail menu was created to complement ARDOR's kitchen, not compete with it. Each drink is built to support the dining experience with balanced profiles, clean finishes and intentional restraint.

Rather than spotlighting theatrics or bold flavours, Subtext works in the background. Its ingredients are chosen for how they interact, not just how they taste: acidity that lifts, bitterness that anchors, texture that lingers. Influences come from around the world, but nothing is added unless it serves a purpose on the palate.

My work included full concept development, original cocktail creation, staff training, and integration of advanced techniques such as clarified cocktails, sous vide, centrifuge and understated culinary pairings-resulting in a beverage program that enhances the guest's sensory experience.


Lobby Bar
EDITION West Hollywood

For the Lobby Bar, I reimagined the entire cocktail program to strike a balance between timeless luxury and modern innovation-positioning the venue as a sophisticated yet approachable social hub within the hotel. The menu blends elevated classics with signature creations, utilizing techniques like freezer martinis and minimalistic highball variations to deliver drinks with precision and consistency in a high-volume environment. In addition to concept and menu development, I implemented streamlined prep processes and batching solutions to optimize service flow and ensure quality at scale.


The Roof
EDITION West Hollywood

On The Roof, I curated a cocktail program inspired by the vibrant energy of Los Angeles and a sun-soaked, Latin American influence. The drinks focus on fresh, bright flavors with playful presentations that match the rooftop's relaxed, upscale atmosphere. I developed the entire concept, signature cocktails, and staff training, incorporating regionally-inspired ingredients and easy-drinking formats that are ideal for daytime service and poolside enjoyment. The result is a menu that enhances the rooftop's lifestyle-driven guest experience, while ensuring operational efficiency in an all-day operation as well as outdoor setting.
