The Vision
Above the forest canopy, where mountain air runs clear and horizons stretch without end, Rimrock Banff rises from the slopes of Sulphur Mountain. As the first Emblems Collection hotel in North America, the property is shaped by the wild expanse of Banff National Park. My role is to translate this rhythmic, seasonal landscape into a world-class beverage identity that honours its UNESCO World Heritage surroundings.
The Professional Strategy
I am leading a comprehensive overhaul of the property’s beverage ecosystem, ensuring that every touchpoint—from the lobby bar to the guest room—reflects a cohesive, luxury identity.
Distinct Concept Identity: Developing a clear, unique brand and beverage DNA for each individual restaurant and bar within the resort to ensure a diverse guest journey.
Architectural Bar Layout: Designing the physical bar footprints to optimise bartender ergonomics and operational flow while maintaining a high-end aesthetic.
Elevated Guest Room Experience: Creating an innovative amenity program and a bespoke In-Room Mixology service that brings the craft of the bar into the private sanctuary of the guest suite.
Banquets & Event Design: Completely redesigning the banquet beverage operation to deliver the same level of precision and innovation for large-scale events as we do for our intimate bars.
Nature-Led Mixology: Curating concepts where the "story of the earth" is told through botanical infusions and regional spirits, reflecting the park's transition from turquoise summer lakes to golden autumn larches.
Spirits & Brand Partnerships: Curating a world-class spirits library and securing exclusive partnerships with global and boutique brands to offer rare, destination-specific products.
