Bal Harbour Tides

Bal Harbour rests on a narrow barrier island where the Atlantic meets the calm of the intracoastal — a place shaped by water and the slow movement of light across the day. I designed the Pool & Beach cocktail program, Bal Harbour Tides, to follow that rhythm, carrying the guest from the bright ease of the morning through the long gold of the afternoon.

The program celebrates the coast in fresh, generous flavour, built to hold its balance in the Miami heat. Frozen serves arrive vivid and slushed, coconuts cracked to order over ice, alongside a collection of original spritzes and a clarified white peach milk punch unique to the program. My work encompassed full concept development, signature cocktail and spritz creation, and the prep and service architecture required for an all-day, high-volume outdoor operation.
